Crusty White Bread Rolls

CRUSTY WHITE BREAD ROLLS

This wonderful bread roll recipe comes courtesy of www.thehungryelephant.ca.  It’s the nearest recipe I’ve found to real, crusty, white bread rolls.  A lovely crust and soft, fluffy bread roll inside.  Simply delicious with just your favourite dairy butter and so easy to make; made and baked within 20 minutes.  Perfect for serving with keto lasagna or for burgers and cold sandwiches.  I make 4 rolls with this recipe (rather than 5) so the net carb count comes in at 4 per roll.

Berry Pavlova with Sticky Toffee Sauce

BERRY PAVLOVA with STICKY TOFFEE SAUCE Here’s a truly wonderful summer dessert.  What could be nicer than soft, luscious, sweet pavlova with ripe strawberries and droplets of sticky toffee sauce? At only 3.5 net carbs per serving, this is going to be our favourite dessert throughout the summer. Ingredients – For an 8 serving Pavlova

Almond & Raspberry Muffins

ALMOND & RASPBERRY MUFFINS

I just love the combination of almond and raspberries.  There’s something rich and luxurious about these two flavours together and this recipe was inspired by my love of bakewell tarts.  The muffins are simple to make, bake in 18 minutes and can easily be frozen.  These lovely muffins have just 4.5 carbs each and are delicious with a cup of tea or coffee or warmed in the microwave and served with cream or custard as a dessert or pudding.

Chocolate Brownies

CHOCOLATE BROWNIES

As a chocoholic, it has been lovely to work on my regular gluten-free brownie recipe to find a keto version – and here it is!  These yummy brownies are incredibly rich and lightly gooey in the middle.  I’ve baked them here in individual square tins (because they look pretty), but they can also be baked in a square or oblong tin and cut into portions.  This recipe makes 16 brownies and they have just 1.8 carbs each.  (2.3 carbs each if you add walnuts). Delicious, rich, yummy brownies.

Sticky Toffee Pudding

Sticky Toffee Pudding

Oh my!  Treat time.  Because it’s sometimes a challenge to find different ingredients in different countries, I’ve mixed three recipes together here to create my own version of this classic favourite. Sweet, light & spongy and with a very satisfying taste of Toffee, this lovely dessert is quick and easy to make and will satisfy those with the sweetest of teeth!  It’s only 3.5 carbs per serving and is worthy of any family table.

Thai Monkfish

THAI MONKFISH

My spiritual home is Thailand and I just adore Thai food.  I’ve put this lovely recipe together to combine my love of the flavours of traditional Thai cuisine with my favourite fish, Monkfish.  It’s an incredibly healthy dish and takes just 5 minutes to prepare and 15 minutes to cook in a steamer.  At only 3.8 carbs per serving, this is a delicious lunch dish or light evening supper.

Oriental Monkfish

ORIENTAL MONKFISH

This lovely, light dish is perfect for a lunch or a midweek supper.  It is incredibly tasty and satisfying and only takes 20 minutes to prepare and cook.  At only 3.5 carbs per serving, this is a wonderful Keto dish.

Quick & Easy Carrot Cake

QUICK & EASY CARROT CAKE

I’ve adapted this lovely, moist, carrot cake recipe from my favourite Banana Bread recipe.  It’s a low-carb, rather than keen keto, option, but it is nonetheless delicious and worthy of a try for a special treat.  I’ve managed to finesse a reasonable option for the traditional cream-cheese filling and topping too.  This cake is made in a loaf tin to provide 12 slices and without the cream cheese, it’s 6 carbs per slice and with the addition of filling and topping, it comes in at 6.5 carbs per slice.

Chocolate Heaven Cake

CHOCOLATE HEAVEN CAKE

What can I say?  This truly lovely chocolate cake is a big hit with everyone who tries it.  I’m not sure if it’s the lovely chocolatey sponge, the amazing chocolate sauce, or the sweetened cream that hits the hot-spot for most people – maybe it’s the combination of all three?  At 7 carbs per slice (if you cut your cake into 12 slices), it’s a delicious treat you can have when you have a few carbs in the bank!

Poached Egg, Avo & Bacon on Toast

POACHED EGG, AVO & BACON ON TOAST

This has become one of our favourite quick-and-easy suppers. It’s tasty, healthy and incredibly filling and satisfying.  At only 5g of carbs per serving, it’s a lovely choice for a quick lunch or supper.

Seeded Loaf

SEEDED LOAF

This lovely, seeded loaf is simple to make and is incredibly filling.  It is delicious with both sweet and savoury toppings, or just toasted with lashings of butter.  Made in a regular loaf tin, this hearty bread will slice into 20 servings and has just 2g of carbs per slice. It keeps well in the fridge for 3 days and also freezes perfectly.  I usually slice the bread and place a piece of greaseproof paper between each slice prior to freezing.  Unlike other keto breads, this bread toasts nicely, but I find it needs to be toasted 2 or 3 times for a short time, rather than all at once, to prevent the edges burning.

Keto Crackers

KETO CRACKERS

These lovely seeded crackers are a staple snack in our house.  They are so easy to make and have a lovely crispy texture.  Delicious simply loaded with butter, but also delicious with Tirokafteri, butter and avocado slices, or butter and your favourite keto jam!  This recipe makes 18 substantial crackers (as I like them quite thick) and each cracker comes out at 1.5 carbs each.  Credit for the recipe goes to www.dietdoctor.com.
