MOROCCAN LAMB TAGINE This is my new, favourite recipe. This lovely rich and spicy lamb tagine is perfect for cold, wintry evenings. The flavour is deep and satisfying and the aromas in the house are delightful. This dish is simple to create and as it bakes slowly in the oven, allows time to socialise with
JAMAICAN BAKED CHICKEN This is a lovely, keto variation on the KFC type of chicken in seasoned breadcrumbs. Very simple to make and absolutely delicious to eat. I tend to make this with chicken thighs as there’s more meat on them than drumsticks and I make chicken breasts for my partner as he doesn’t like
RED PESTO PORK CHOPS This is a wonderfully simple and deliciously tasty dish to cook. Thick, wholesome pork chops marinated and cooked in red pesto sauce with a sticky and caramelised finish, are truly a revelation. Inspired by www.dietdoctor.com, this has become a staple dish in our household. Incredibly low carb at just 3.4g net
PERSIAN LEMON CHICKEN SKEWERS This wonderful recipe has been inspired by tasting the wonderful lemon chicken wings our Persian neighbours have shared with us at our annual neighbourhood BBQ. It’s their family recipe, which has been a favourite for many years and is always a feature at our get-togethers. Served with Persian Rice (made the
HEARTY CHEESE BURGERS
These simple and delicious burgers are a real treat on a keto diet. Hearty, filling and satisfying and packing a wonderful taste, they are a weekly treat in our house. I use the ‘Simply the Best Bread Rolls’ for the filler-bread and the best, leaner minced beef you can get from your local butcher or supermarket. You can choose which cheese to use and whether to gently sauteé your onion in the juices from the burgers, or have the onion raw. These lovely burgers are only 5 carbs each.
TOAD IN THE HOLE
This lovely family favourite is so quick and easy to make and gives you that really satisfying, traditional, home-cooked supper feeling. Using this blog’s Yorkshire Pudding recipe and simple pork sausages from our local butcher, I can’t think of a much better choice for a cold, rainy evening. There are 10g of carbs per serving.
STEAMED MONKFISH & PARSLEY SAUCE
This is a wonderful, quick and easy, dish to prepare for supper (or even a substantial lunch). The meatiness of the monkfish provides for a filling and satisfying meal and at less than 4 carbs per serving, this is a perfect keto meal, full of flavour and goodness. You’ll need a steamer for this recipe, but this could be cooked with the fish wrapped in a greaseproof paper parcel and baked in the oven.
AMAZING YORKSHIRE PUDDINGS Being a Yorkshire lass, there’s nothing better than Sunday Lunch (or any lunch for that matter) including Yorkshire Puddings so, it’s been a relief and a welcome revelation for me to discover that Yorkshires can be made without using wheat. Although Arrowroot (the wheat substitute) contains some starch carbohydrate, Yorkshire made this
BACON & BRIE TARTLETS
These lovely little tartlets are so easy to make and are a delicious lunch or supper, served hot or cold, with roasted vegetables (keto-allowed veg) or a green salad. They just contain 4g of carbs each (so the men in the house can easily eat two!)
This lovely winter dish has been given the keto treatment by using cauliflower mash. When I first tried it on my family, they hadn’t even realised it wasn’t potato mash! It’s just 10g of carbs per serving, but with some steamed or creamed spinach, you’ll not need much else.
CHEESE & ONION QUICHE
This wonderfully easy quiche is a staple in our family. You can dress it up or down as you like and served with either a green salad or some keto-friendly vegetables, it’s a must. With only 10g carbs per serving, it’s likely to become a go-to quick, supper or lunch for you too!
RUSTIC MINCED BEEF PIE
Wonderful rustic suet pastry crust on top of a minced-beef, onion and mushroom filling. A true winter-warmer that is full of flavour and only 7.5 carbs per serving.
