Flatbread
On October 11, 2021 by ElizFLATBREAD This lovely recipe is so versatile. I mainly use it for dips when eating tapas or for an evening snack with cheese whilst watching a movie. You can season the flatbread in whatever way you wish and cut the dough to whatever shape you wish. I make 24 small oblong flatbreads and they come

“Lundy” Cabbage Casserole
On May 27, 2021 by Eliz‘LUNDY’ CABBAGE CASSEROLE
This lovely dish is the perfect accompaniment for all meat and chicken dishes. It is particularly good with pork, bacon, ham and sirloin steaks. It’s a recipe I’ve adapted from www.dietdoctor.com and is now a firm favourite in our household. I use savoy cabbage as it tends not to go as soft as other varieties and you can use whichever hard cheese is your favourite. It’s border-line keto as this recipe comes out as a low-carb 11 carbs per serving.

Hearty Cheese Burgers
On May 26, 2021 by ElizHEARTY CHEESE BURGERS
These simple and delicious burgers are a real treat on a keto diet. Hearty, filling and satisfying and packing a wonderful taste, they are a weekly treat in our house. I use the ‘Simply the Best Bread Rolls’ for the filler-bread and the best, leaner minced beef you can get from your local butcher or supermarket. You can choose which cheese to use and whether to gently sauteé your onion in the juices from the burgers, or have the onion raw. These lovely burgers are only 5 carbs each.

Cauliflower Cheese
On April 4, 2021 by ElizCauliflower Cheese
This Sunday Lunch accompaniment classic is brilliantly easy to make and includes lashings of incredibly rich and cheesy sauce with a firm (not soggy) cauliflower. This lovely dish is 6.5g per serving if you divide the recipe below by six.

Keto Crackers
On March 10, 2021 by ElizKETO CRACKERS
These lovely seeded crackers are a staple snack in our house. They are so easy to make and have a lovely crispy texture. Delicious simply loaded with butter, but also delicious with Tirokafteri, butter and avocado slices, or butter and your favourite keto jam! This recipe makes 18 substantial crackers (as I like them quite thick) and each cracker comes out at 1.5 carbs each. Credit for the recipe goes to www.dietdoctor.com.

Tirokafteri (Spicy Greek Cheese Dip)
On March 10, 2021 by ElizTIROKAFTERI
(Spicy Greek Cheese Dip)
This is a wonderful, thick and chunky, dip that can be spread on keto crackers for a quick and tasty lunch or snack. This lovely recipe takes just minutes to prepare and the chilli spice level can easily be adjusted to taste. I like it quite spicy. The whole pot of Dip is just 15 carbs and covers approximately 30 crackers depending on how much you like to load them! You just have to decide how to serve it…

Ingenious Sheet Pan Quesadillas
On February 25, 2021 by ElizThere are a bunch of online recipes for sheetpan quesadillas, and most of them are a form of oven-fried flour tortillas that have been filled foremost with cheese, and then folded on a sheet pan, topped by another sheet pan to apply pressure so the quesadilla seals during the baking process. But there are only

Bacon & Brie Tartlets
On January 2, 2021 by ElizBACON & BRIE TARTLETS
These lovely little tartlets are so easy to make and are a delicious lunch or supper, served hot or cold, with roasted vegetables (keto-allowed veg) or a green salad. They just contain 4g of carbs each (so the men in the house can easily eat two!)

Cheese & Onion Quiche
On December 16, 2020 by ElizCHEESE & ONION QUICHE
This wonderfully easy quiche is a staple in our family. You can dress it up or down as you like and served with either a green salad or some keto-friendly vegetables, it’s a must. With only 10g carbs per serving, it’s likely to become a go-to quick, supper or lunch for you too!

Pimento Cheese
On September 20, 2020 by ElizOne typically thinks of pimento cheese as a Southern thing, but it actually has roots in upstate New York. In the 1870s, farmers in that state began producing a cheese called French Neufchâtel, the forerunner of what later became known to us as cream cheese. Around the same time, sweet peppers from Spain, called

Boursin Macaroni & Cheese in a Crock Pot
On November 28, 2018 by ElizThis is a re-post of a Boursin Macaroni & Cheese recipe I did in 2016, but updated to accommodate a new methodology of cooking it that is infinitely easier, with thanks and recognition to My Number One Fan for having found it on the Damn Delicious website. This is my recipe, however. I give credit

Kicked Up Meatloaf with Mac and Cheese
On May 1, 2016 by ElizIn the preceding post, I included a recipe for Boursin Macaroni & Cheese. It was great, fit the bill for the evening I had planned, but was not to be repeated on this occasion. This was not just about Mac & Cheese. This was about the totality of a Comfort Food Dinner. After a grueling
