Blackberry Jam with Brandy & Vodka
On December 4, 2020 by ElizBLACKBERRY JAM with BRANDY & VODKA
Blackberries are one of my favourite fruits, so it is wonderful to have developed a recipe that will allow me to eat sweet, juicy blackberries, on my keto diet. I use frozen blackberries for this recipe as I pick them myself at the end of each summer season and freeze them at home. They have a much better flavour than forced out-of-season blackberries you can buy in the shops. At just 2g per tablespoon, this jam is a daily treat you can easily afford – even on keto!

Strawberry & Cherry Vodka Jam
On December 3, 2020 by ElizSTRAWBERRY & CHERRY VODKA JAM
OMG – Who can eat jam like this on a diet? This fantastic, sweet, and flavourful jam is a must for anyone with a sweet tooth on a keto, low-carb or regular low-calorie diet. The only carbohydrates come from the strawberries themselves and at only 1.65 carbs per tablespoon, it’s a lovely breakfast or afternoon treat you simply can’t afford to miss. The cherry vodka adds a wonderfully decadent feel to the jam to make it a special Christmas treat.

Red Hot Mess
On July 20, 2019 by ElizThis was something I made on the spur of the moment with ingredients I had on hand and named it instantly based on the fact that it is a mess, it was served hot and had red onions topped with Cholula Hot Sauce, hence, a Red Hot Mess, something of a double entendre. In any

Egg Muffins
On September 24, 2018 by ElizI really believe that in the culinary world, there isn’t much that is genuinely, truly new. Things generally seem to be a reconfiguration or new methodology of an older iteration of the same basic concept. In my day, it was the Atkins Diet that eliminated sugar and lowered carb counts. But that was just a

Shirred Curried Eggs
On May 20, 2018 by ElizThis is something I created a very long time ago and routinely make to this day. I’ve been making it for so long I don’t remember the first time I made it or from where the inspiration came. It’s so unique that I couldn’t find anything similar on the Internet, so I’m taking full credit

Crustless Quiche Lorraine
On December 17, 2017 by ElizMaybe you’ll remember a time back in the late 1970’s and early 80’s when quiche was all the rage. Restaurants of any caliber had their version of Quiche Lorraine on their menu and some restaurants wholly revolved around this dish, offering as many ingredient options as a pizza joint has toppings. Quiche has been around

Buttermilk Pan Biscuits
On August 22, 2016 by ElizMy Number One Fan gets all the credit for finding this incredibly simple, easy biscuit recipe from “The Country Cook” website, called “Butter Dip Buttermilk Biscuits”. For years, I’ve resisted baking. I found baking tedious, requiring tools and patience I don’t have. Nothing could be further from the truth with this recipe! The only thing

Sunday Brunch
On January 10, 2016 by ElizI’m not sure how I talked myself into serving a Sunday Brunch to four families and eleven people as we said goodbye to 2015, but I did. How was I going to do it? How was I going to prepare food for all these people while still being able to maintain my duties as a

Homemade Breakfast Sausage Patties
On August 2, 2015 by ElizIt actually had never occurred to me before that one could make homemade sausage patties that would be more delicious and fresher than anything you can buy from the grocery store in a plastic sleeve. And all commercially prepared breakfast sausage has sugar in it, so the patty will caramelize and brown when cooked, which

Sausage, Wild Rice & Red Bell Pepper Flourless Quiche
On December 20, 2013 by ElizMy Number One Fan found this delicious flourless quiche recipe on the Tasty Kitchen website for a light supper one evening, but I had the leftovers as breakfast rolled up in a soft flour tacos. This would be fine as a traditional quiche, too. Just fill a frozen pie shell with this recipe and modify

Banana Pancakes
On March 31, 2013 by ElizSo, all the rage in dieting these days is something call the Paleo diet, or the so-called Caveman diet. The theme essentially is to avoid all grains and gluten products, eating as we did when we were hunter gatherers before we became agrarian societies. It’s a new twist on an old theme, essentially to avoid
