CRUSTY WHITE BREAD ROLLS
This wonderful bread roll recipe comes courtesy of www.thehungryelephant.ca. It’s the nearest recipe I’ve found to real, crusty, white bread rolls. A lovely crust and soft, fluffy bread roll inside. Simply delicious with just your favourite dairy butter and so easy to make; made and baked within 20 minutes. Perfect for serving with keto lasagna or for burgers and cold sandwiches. I make 4 rolls with this recipe (rather than 5) so the net carb count comes in at 4 per roll.
HEARTY CHEESE BURGERS
These simple and delicious burgers are a real treat on a keto diet. Hearty, filling and satisfying and packing a wonderful taste, they are a weekly treat in our house. I use the ‘Simply the Best Bread Rolls’ for the filler-bread and the best, leaner minced beef you can get from your local butcher or supermarket. You can choose which cheese to use and whether to gently sauteé your onion in the juices from the burgers, or have the onion raw. These lovely burgers are only 5 carbs each.
This lovely, seeded loaf is simple to make and is incredibly filling. It is delicious with both sweet and savoury toppings, or just toasted with lashings of butter. Made in a regular loaf tin, this hearty bread will slice into 20 servings and has just 2g of carbs per slice. It keeps well in the fridge for 3 days and also freezes perfectly. I usually slice the bread and place a piece of greaseproof paper between each slice prior to freezing. Unlike other keto breads, this bread toasts nicely, but I find it needs to be toasted 2 or 3 times for a short time, rather than all at once, to prevent the edges burning.

The Christmas spices (and brandy if you choose it) make this family classic extra special. It’s sweet and warm and comforting and just smells delicious. Using the ‘Simply The Best Bread Rolls’ recipe earlier in this blog, the carb count is limited to just 6 per portion. Easy to make, what’s not to love?
BLACKBERRY JAM with BRANDY & VODKA
Blackberries are one of my favourite fruits, so it is wonderful to have developed a recipe that will allow me to eat sweet, juicy blackberries, on my keto diet. I use frozen blackberries for this recipe as I pick them myself at the end of each summer season and freeze them at home. They have a much better flavour than forced out-of-season blackberries you can buy in the shops. At just 2g per tablespoon, this jam is a daily treat you can easily afford – even on keto!
STRAWBERRY & CHERRY VODKA JAM
OMG – Who can eat jam like this on a diet? This fantastic, sweet, and flavourful jam is a must for anyone with a sweet tooth on a keto, low-carb or regular low-calorie diet. The only carbohydrates come from the strawberries themselves and at only 1.65 carbs per tablespoon, it’s a lovely breakfast or afternoon treat you simply can’t afford to miss. The cherry vodka adds a wonderfully decadent feel to the jam to make it a special Christmas treat.
RUSTIC WALNUT BREAD
A rustic variation on the best keto rolls, this lovely nutty bread has become a firm favourite in our house. It is wonderful just on its own with lashings of butter (particularly when it is hot, straight from the oven) or as a hearty and filling accompaniment to any meal, particularly when you are serving a salad with vinaigrette. It has 4.5g carbs per slice, so more low-carb than keto, and takes less than an hour to make and bake!
Here’s a lovely naan bread accompaniment to your favourite curries and it comes out at only 1g per naan bread. It takes a little while to cook a batch, so you need a little patience, but this recipe makes 8 naan breads and I find that I often freeze 4 to use at a later date. They are particularly wonderful slathered with lashings of home-made garlic butter.
SIMPLY THE BEST BREAD ROLLS
I found this recipe on www.dietdoctor.com. I have tried to adapt it many times, but to no avail. This is simply the best Keto bread recipe I have found and tampering with the ingredients has not worked for me. They are made in 10 minutes and bake in 50 minutes – and the house smells wonderful. These rolls are like half-white/half-brown rolls and perfect for sandwiches, as burger buns, or simply smeared with your favourite butter. It’s not brilliant to toast, but other than that, it’s perfect and with only 2g of carbs per roll, it’s a brilliant godsend.
Ingredients – For 6 bread rolls
- 1 1/4 cups Almond Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 5 tblsp Psyllium Husk Powder
- 1/2 cup Egg Whites (3-4 eggs depending upon size)
- 2 tsp Cider Vinegar
- 1 cup Quite warm water (hot but not boiling)
